Every Northbound Blade kitchen knife is hand-forged, but the steel underneath the pattern makes a real difference in how a blade performs day to day. Here's how our three most common steels compare.
Damascus steel
Damascus is made by folding and forge-welding layers of steel together, which is what produces the signature wood-grain pattern running through the blade. Beyond the look, folding refines the steel's grain structure, giving Damascus blades a good balance of hardness and toughness — they take a keen edge and hold it well through regular kitchen use, while still being straightforward to re-sharpen on a whetstone. Because every billet folds slightly differently, no two Damascus patterns are ever identical.
High-carbon steel
High-carbon steel is prized by cooks who want the sharpest possible edge and don't mind a bit of extra maintenance in exchange. It sharpens to a finer, keener edge than most stainless alloys and is easier to restore at home with a basic whetstone. The tradeoff is corrosion resistance: high-carbon blades need to be dried immediately after washing and given a light coat of mineral oil before storage, or they can spot and rust. Several of our cleavers and chef's knives use differentially hardened high-carbon steel, which leaves a visible hamon line where the hard cutting edge meets the softer, tougher spine.
D2 steel
D2 is a semi-stainless tool steel with high chromium and carbon content, typically hardened to 60–62 HRC in our knives. It sits between the other two: excellent wear resistance and edge retention, with meaningfully better corrosion resistance than high-carbon steel, though not quite as low-maintenance as true stainless. D2 holds an edge a long time between sharpenings, which makes it a strong choice for knives that see heavy daily use, like our skinning and field knives.
Which should you choose?
If you want a striking, one-of-a-kind pattern and a well-rounded daily user, Damascus is the easiest choice — it's the steel behind most of our chef sets. If you want the sharpest possible edge and don't mind an extra few seconds of care after each use, high-carbon is worth it, especially in a cleaver or dedicated chef's knife. If your knife is going to see hard, frequent use with less fuss, D2 holds its edge the longest between sharpenings.
