Care & Maintenance
Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

Knife Shape
What is a Bunka?
The Bunka is a traditional Japanese all-purpose kitchen knife, recognizable by its angular K-tip (kiritsuke-style) point. That sharper point gives more precise control for detail work — trimming, scoring, and fine cuts — while the blade still handles everyday chopping and slicing with ease. It's a favorite first Japanese-style knife for cooks who want one blade that does it all.
From the forge
About this piece
A traditional Japanese Bunka — an all-purpose kitchen knife with an angular K-tip (kiritsuke-style) point that gives cleaner control on detail work than a rounded blade. The blade is hand-forged with a dark kurouchi finish along the spine, fading into a polished, wavy-tempered edge.
The handle is a two-tone octagonal wa-handle — warm walnut paired with a dark rosewood ferrule — shaped for a comfortable, precise grip.
The details: Blade length 178mm (7"), total length 325mm (12.8"). Hand-forged high-carbon steel with a kurouchi finish and polished cutting edge. Octagonal wa-handle: walnut with rosewood ferrule. Includes a leather sheath. Hand wash, dry immediately, occasional light oiling of blade and handle.
A gift worth giving: The Bunka's angular tip and all-purpose blade make it a favorite for cooks who want one knife that handles chopping, slicing, and detail work equally well — a strong first Japanese-style knife for someone building out their kitchen.
Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.
FAQ
Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade and handle occasionally.
What makes a Bunka different from a Santoku? The Bunka's angular K-tip gives more precise point control than a Santoku's rounded tip — useful for detail work alongside everyday chopping.
Does it come with a sheath? Yes — every Northbound Blade knife ships with a leather sheath included.
