Carbon Steel · 58 to 65 HRC
Blade steel: Carbon Steel
Hardness: 58 to 65 HRC (Rockwell scale)
High-carbon steel prized for exceptional sharpness and edge retention. Requires regular oiling to prevent rust but rewards with superior cutting performance.
Exact measurements for this piece are being added — reach out and we're happy to confirm dimensions before you order.
Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.
Add free engraving with the option above — up to 20 characters on the blade, or engrave the leather sheath. Adds 2 business days. Engraved pieces are final sale. For any other engraving request, email us at info@northboundblade.com.
We ship worldwide, fully tracked, with free shipping on orders over $150 to Canada and the USA. Each piece is prepared within 5 business days, and delivery options for your country are shown at checkout.
If something isn't right when it arrives, request a return within 14 days of delivery — we review every request with care and will always work with you to make it right. Engraved pieces are final sale.
From the forge
A wide-bellied cleaver built for real kitchen work — splitting joints, crushing garlic, or breaking down a whole bird. The blade is hand-forged from high-carbon steel and differentially hardened, leaving a natural hamon line where the hard cutting edge meets the softer, hammer-textured spine.
The handle is cast from a deep red, pink, and blue swirled resin, giving each piece a one-of-a-kind marbled look — no two are exactly alike.
The details: Carbon steel (58–65 HRC), hand-forged and differentially hardened with a visible hamon line, mirror-polished edge. Full tang construction. Cast resin handle, brass pins. Includes hand-stitched leather belt sheath with snap closures. Hand wash, dry immediately, occasional light oiling to prevent staining.
A gift worth giving: The one-of-a-kind resin pattern means the piece you're gifting is genuinely unrepeatable — a strong choice for a home cook who already has the basics covered.
Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.
FAQ
Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade occasionally to prevent staining.
What's a hamon line? It's the visible line left by differential hardening, where the hard cutting edge meets the softer spine — a traditional forging technique that's both functional and a mark of hand craftsmanship.
What does "full tang" mean, and why does it matter? The blade steel runs the full length of the handle in one piece — real durability for a cleaver, which sees serious chopping force.
01 — Forged
Bar stock is heated and hammered to shape by hand — every bevel drawn out at the anvil, never stamped from a sheet.
02 — Tempered
Each blade is hardened and tempered in controlled cycles, balancing a keen, hard edge with a resilient spine.
03 — Finished
Ground, polished and fitted with its handle, then inspected edge to pommel before it ever leaves the forge.
