Care & Maintenance

Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

Personalisation & Engraving

Add free engraving with the option above — up to 20 characters on the blade, or engrave the leather sheath. Adds 2 business days. Engraved pieces are final sale. For any other engraving request, email us at info@northboundblade.com.

Knife Shape

What is a Gyuto?

The Gyuto is the Japanese take on the Western chef's knife — typically thinner, lighter, and with a longer curve to the blade for smooth, rocking cuts through vegetables, meat, and everything in between. It's the knife most professional cooks reach for daily, offering more precision than a traditional Western chef's knife without sacrificing versatility.

From the forge

About this piece

A Gyuto — the Japanese take on the Western chef's knife, with a longer, gently curved belly built for smooth rocking cuts through vegetables, meat, and everything else on the board. The blade is hand-forged high-carbon steel with a dark, textured kurouchi finish along the spine, fading into a polished, wavy-tempered edge.

The handle is a two-tone octagonal wa-handle — deep rosewood paired with a pale maple ferrule — for a clean, high-contrast look and a secure grip.

The details: Blade length 220mm (8.7"), total length 360mm (14.2"). Hand-forged high-carbon steel with a textured kurouchi finish and polished cutting edge. Octagonal wa-handle: rosewood with maple ferrule. Includes a leather sheath. Hand wash, dry immediately, occasional light oiling of blade and handle.

A gift worth giving: The Gyuto is the knife most cooks reach for daily — long enough for real prep work, balanced for control, and finished with a handle whose light-and-dark contrast stands out in any knife block. A strong all-purpose pick for anyone building out a serious kitchen.

Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.

FAQ

Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade and handle occasionally.

What makes a Gyuto different from a Western chef's knife? A Gyuto is generally thinner and lighter with a flatter profile toward the heel, giving a more precise, controlled cut — while still handling the same everyday chopping and slicing work.

Does it come with a sheath? Yes — every Northbound Blade knife ships with a leather sheath included.

Hardened true

Each blade is hardened and tempered in controlled cycles, balancing a keen, hard edge with a resilient spine.

03 — Finished

Fitted & inspected

Ground, polished and fitted with its handle, then inspected edge to pommel before it ever leaves the forge.
