Dimensions & Weight

Exact measurements for this piece are being added — reach out and we're happy to confirm dimensions before you order.

Care & Maintenance

Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

Personalisation & Engraving

Add free engraving with the option above — up to 20 characters on the blade, or engrave the leather sheath. Adds 2 business days. Engraved pieces are final sale. For any other engraving request, email us at info@northboundblade.com.

Shipping & Returns

We ship worldwide, fully tracked, with free shipping on orders over $150 to Canada and the USA. Each piece is prepared within 2 business days; delivery to Canada and the USA usually takes 8–11 business days, and delivery options for your country are shown at checkout.

Full-price items can be returned within 14 days of delivery, unused and in their original packaging. Sale items and engraved pieces are final sale. If any piece, including a sale or engraved piece, arrives damaged, defective or incorrect, contact us and we'll refund or replace it and cover the return shipping.

From the forge

About this piece

A Kiritsuke-style chef's knife — a gyuto with the angled "K-tip" of the traditional Japanese kiritsuke. The flatter edge is built for clean push cuts through vegetables, meat and fish, while the sharp, angled tip handles the fine work: scoring, trimming and precise slicing. The blade is hand-forged high-carbon steel with a dark, rough kurouchi forge finish across the upper blade, falling away in an irregular wavy line to a bright, polished cutting edge.

The handle is a traditional octagonal wa-handle in honey-toned olive wood with dark grain lines and a black horn ferrule: light, warm in the hand and easy to grip from any angle.

The details: Hand-forged high-carbon steel with a textured kurouchi finish and polished double-bevel edge. Kiritsuke (K-tip) profile. Octagonal wa-handle: olive wood with black horn ferrule. Includes a leather sheath. Hand wash, dry immediately, occasional light oiling of blade and handle.

A gift worth giving: The rough forge-black blade against warm olive wood makes this a knife people remember — one blade for everyday prep that still feels special every time it comes out. A striking pick for the cook who already owns a chef's knife and wants something with more character.

Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.

FAQ

What is a kiritsuke knife? A kiritsuke is a Japanese chef's knife with a long, flat edge and an angled "K-tip". This one is a kiritsuke-style gyuto: an all-purpose chef's knife with the kiritsuke tip, so it handles the same everyday chopping and slicing as a gyuto.

What is a kurouchi finish? Kurouchi ("black forged") is the dark forge scale left on the blade from the forging process. It gives each knife its own rugged texture and helps protect the upper blade, while the polished edge does the cutting.

Does high-carbon steel need special care? Hand wash and dry it right away, and add a drop of food-safe oil before storing. Over time it develops a natural patina. Never use the dishwasher.

Is it single or double bevel? Double bevel, so it works for right- and left-handed cooks and sharpens like any chef's knife.

Does it come with a sheath? Yes — every Northbound Blade knife ships with a leather sheath included.

Can I add engraving? Yes — free engraving is available on every knife.

01 — Forged

Shaped at the anvil

Bar stock is heated and hammered to shape by hand — every bevel drawn out at the anvil, never stamped from a sheet.

02 — Tempered

Hardened true

Each blade is hardened and tempered in controlled cycles, balancing a keen, hard edge with a resilient spine.

03 — Finished

Fitted & inspected

Ground, polished and fitted with its handle, then inspected edge to pommel before it ever leaves the forge.
