Fillet Knives

A fillet knife is a slim, flexible knife for preparing fish in the kitchen: lifting fillets off the bone, removing the skin and trimming salmon, trout and whitefish on your cutting board. All of our fillet knives have 7-inch flexible blades that bend along the backbone and under the skin, so less fish is wasted.

Choose hand-forged Damascus with a fish-engraved camel bone handle, Damascus with a blue wood and rosewood handle, or a mirror-finish stainless blade with a stag handle and full tang. Each knife comes with a leather sheath for safe storage, an optional gift box and free engraving on the blade or sheath.

What makes a good fillet knife for salmon?
A thin, flexible blade about 7 inches long. It follows the rib bones and slides between skin and flesh, so you lift a clean, whole fillet.

Damascus or stainless steel for a fillet knife?
Both work in a home kitchen. Stainless is the easiest to care for. Damascus has a unique layered pattern and needs drying right after washing.

How do I clean a fillet knife after preparing fish?
Wash it by hand in warm, soapy water straight away, dry it fully, and store it in its sheath. No dishwasher, and no long soaks for bone or stag handles.

Is the leather sheath included?
Yes, every fillet knife comes with a leather sheath to protect the edge in the drawer.
