Steel & Hardness

Blade steel: Damascus Steel

Hardness: 58 to 62 HRC (Rockwell scale)

Hand-forged layered steel folded to reveal a distinctive flowing wave pattern — no two blades are alike. Prized for its hard cutting edge and excellent edge retention. Hand wash, dry immediately, and apply a light coat of food-grade oil to protect the etched pattern.

Dimensions & Weight

Exact measurements for this piece are being added — reach out and we're happy to confirm dimensions before you order.

Care & Maintenance

Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

Personalisation & Engraving

Add free engraving with the option above — up to 20 characters on the blade, or engrave the leather sheath. Adds 2 business days. Engraved pieces are final sale. For any other engraving request, email us at info@northboundblade.com.

Shipping & Returns

We ship worldwide, fully tracked, with free shipping on orders over $150 to Canada and the USA. Each piece is prepared within 2 business days; delivery to Canada and the USA usually takes 8–11 business days, and delivery options for your country are shown at checkout.

Full-price items can be returned within 14 days of delivery, unused and in their original packaging. Sale items and engraved pieces are final sale. If any piece, including a sale or engraved piece, arrives damaged, defective or incorrect, contact us and we'll refund or replace it and cover the return shipping.

Knife Shape

What is a Gyuto?

The Gyuto is the Japanese take on the Western chef's knife — typically thinner, lighter, and with a longer curve to the blade for smooth, rocking cuts through vegetables, meat, and everything in between. It's the knife most professional cooks reach for daily, offering more precision than a traditional Western chef's knife without sacrificing versatility.

From the forge

About this piece

A Gyuto — the Japanese take on the Western chef's knife, with a long, gently curved belly built for smooth rocking cuts through vegetables, meat, and everything else on the board. The blade is hand-forged Damascus steel: dark, rough forge patches along the spine, a flowing folded pattern through the middle, and a bold, spiky white line above the dark polished edge, so no two knives are ever quite alike.

The handle is a straight octagonal wa-handle in dark wenge, with deep, ribbed grain that gives a sure grip and a clean, understated look.

The details: Hand-forged Damascus steel with a forged finish along the spine and polished double-bevel edge. Gyuto (chef's knife) profile. Octagonal wenge wood wa-handle. Includes a leather sheath. Hand wash, dry immediately, occasional light oiling of blade and handle.

A gift worth giving: The Gyuto is the knife most cooks reach for every day — and the dark wenge handle and dramatic Damascus line make this one look as good on the board as it works. A strong pick for anyone building out a serious kitchen.

Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.

FAQ

What makes a Gyuto different from a Western chef's knife? A Gyuto is generally thinner and lighter with a flatter profile toward the heel, giving a more precise, controlled cut — while still handling the same everyday chopping and slicing work.

Will the Damascus pattern wear off? No. The pattern runs through the folded steel itself, so it stays with the knife for life; sharpening only refreshes the edge.

Is it single or double bevel? Double bevel, so it works for right- and left-handed cooks and sharpens like any chef's knife.

Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade and handle occasionally.

Does it come with a sheath? Yes — every Northbound Blade knife ships with a leather sheath included.

Can I add engraving? Yes — free engraving is available on every knife.

01 — Forged

Shaped at the anvil

Bar stock is heated and hammered to shape by hand — every bevel drawn out at the anvil, never stamped from a sheet.

02 — Tempered

Hardened true

Each blade is hardened and tempered in controlled cycles, balancing a keen, hard edge with a resilient spine.

03 — Finished

Fitted & inspected

Ground, polished and fitted with its handle, then inspected edge to pommel before it ever leaves the forge.
