Care & Maintenance
Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

From the forge
About this piece
A Kiritsuke-style chef's knife — a gyuto with the angled "K-tip" of the traditional Japanese kiritsuke. The flatter edge is built for clean push cuts through vegetables, meat and fish, while the sharp, angled tip handles the fine work: scoring, trimming and precise slicing. The blade is hand-forged Damascus steel with a dark, textured kurouchi finish along the spine, a flowing folded pattern through the middle and a bright wavy line above the polished cutting edge, so no two knives are ever quite alike.
The handle is a traditional octagonal wa-handle in rich red wood with a black horn ferrule: light, balanced and easy to grip from any angle.
The details: Blade length 210mm (8.25"), total length about 340mm (13.4"). Hand-forged Damascus steel (58–62 HRC) with kurouchi finish and polished double-bevel edge. Octagonal wa-handle: red wood with black horn ferrule. Includes a leather sheath. Hand wash, dry immediately, occasional light oiling of blade and handle.
A gift worth giving: The kiritsuke is the knife that stands out on any board: one blade for everyday prep that still feels special every time it comes out. A striking pick for the cook who already owns a chef's knife and wants something with more character.
Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.
FAQ
What is a kiritsuke knife? A kiritsuke is a Japanese chef's knife with a long, flat edge and an angled "K-tip". This one is a kiritsuke-style gyuto: an all-purpose chef's knife with the kiritsuke tip, so it handles the same everyday chopping and slicing as a gyuto.
Kiritsuke vs gyuto: what's the difference? A gyuto has a curved belly for rocking cuts. A kiritsuke has a flatter edge for push cuts and a pointed, angled tip for detail work. Both handle vegetables, meat and fish.
Is it single or double bevel? Double bevel, so it works for right- and left-handed cooks and sharpens like any chef's knife.
Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade and handle occasionally.
Does it come with a sheath? Yes — every Northbound Blade knife ships with a leather sheath included.
Can I add engraving? Yes — free engraving is available on every knife.
