Care & Maintenance

Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

Knife Shape

What is a Bunka?

The Bunka is a traditional Japanese all-purpose kitchen knife, recognizable by its angular K-tip (kiritsuke-style) point. That sharper point gives more precise control for detail work — trimming, scoring, and fine cuts — while the blade still handles everyday chopping and slicing with ease. It's a favorite first Japanese-style knife for cooks who want one blade that does it all.

From the forge

About this piece

A traditional Japanese Bunka with an angular K-tip (kiritsuke-style) point for precise, controlled cuts alongside everyday chopping. The blade is hand-forged Damascus steel — available in two distinct folded patterns, so no two knives of the same pattern are ever quite alike.

The handle pairs a dark rosewood grip with a black buffalo horn ferrule and a thin silver spacer ring at the bolster — a refined, traditional wa-handle finish.

The details: Blade length 180mm (7.1"), total length 327mm (12.9"). Hand-forged Damascus steel (58–62 HRC), available in Pattern 1 or Pattern 2. Octagonal wa-handle: rosewood with black buffalo horn ferrule and silver spacer ring. Includes a leather sheath. Hand wash, dry immediately, occasional light oiling of blade and handle.

A gift worth giving: Two Damascus patterns to choose from means this piece can be picked to match the recipient's taste — a distinctive, refined all-purpose knife for a cook who wants their Bunka to double as a showpiece.

Every piece leaves the forge ready for a lifetime of use — our Knife Care guide covers the few simple habits that keep a hand-forged edge that way.

FAQ

What's the difference between Pattern 1 and Pattern 2? Both are hand-forged Damascus steel of the same quality — the difference is purely in how the folded layers pattern out during forging, so it comes down to which look you prefer.

Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade and handle occasionally.

What makes a Bunka different from a Santoku? The Bunka's angular K-tip gives more precise point control than a Santoku's rounded tip — useful for detail work alongside everyday chopping.

Does it come with a sheath? Yes — every Northbound Blade knife ships with a leather sheath included.

01 — Forged

Shaped at the anvil

Bar stock is heated and hammered to shape by hand — every bevel drawn out at the anvil, never stamped from a sheet.

02 — Tempered

Hardened true

Each blade is hardened and tempered in controlled cycles, balancing a keen, hard edge with a resilient spine.

03 — Finished

Fitted & inspected

Ground, polished and fitted with its handle, then inspected edge to pommel before it ever leaves the forge.
