Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

A Gyuto — the Japanese take on the Western chef's knife, with a longer, gently curved belly built for smooth rocking cuts through vegetables, meat, and everything else on the board. The blade is hand-forged Damascus steel — available in two distinct folded patterns, so no two knives of the same pattern are ever quite alike.

The handle is polished black buffalo horn with a decorative mosaic pin at center, set with three polished pins for a clean, substantial grip.
