Care & Maintenance

Hand wash only with warm water and mild soap, and dry immediately — never leave a blade soaking or run it through a dishwasher. Wipe on a light coat of food-grade mineral oil after use to protect the steel, and store it dry in a sheath, knife roll, or on a magnetic strip. A few seconds of care after each use keeps a hand-forged edge true for decades.

A Santoku — the versatile "three virtues" knife, built to handle slicing, dicing, and mincing equally well with its flat edge and gently rounded tip. The blade is hand-forged Damascus steel — available in two distinct folded patterns, so no two knives of the same pattern are ever quite alike.

The handle is a solid octagonal rosewood wa-handle, shaped for a comfortable, precise grip.

What's the difference between Pattern 1 and Pattern 2? Both are hand-forged Damascus steel of the same quality — the difference is purely in how the folded layers pattern out during forging, so it comes down to which look you prefer.

Is this dishwasher safe? No — hand wash and dry immediately after use; oil the blade and handle occasionally.

What makes a Santoku different from a Gyuto? The Santoku has a flatter edge and a more rounded tip, making it well suited to a straight up-and-down chopping motion rather than the rocking motion a Gyuto is built for.
